Cuz it's easier. If you're not exactly sure what holiday a particular person celebrates, but want to wish them happiness during the season, "Happy Holidays" has you covered. Plus, New Year's Day is considered a holiday, so "Happy Holidays" takes that into account.
Shitheads in the media always need irrelevant bullshit to fill up airtime, so they've devoted countless hours to making saying "Happy Holidays" some kind of negative thing. As if they give a shit one way or another.
