. You don't want your champions changing every fight, it doesn't give you time to build them up or promote them. Look at Anderson Silva when he was losing fights in the beginning of his career in PRIDE, he was just another fighter with some 'natural talent', but fast forward to his domination in the UFC. They've built him up as the best Pound for Pound fighter in the world. You can apply that same principal to any combative sports. Undefeated champions sell PPVs. IE; Mike Tyson, Ali, Roy Jones Jr. The list goes on and on.
