Like mozzarella is to pizza, cheese curds in poutine isn't anything overpowering, it simply adds a slight cheesiness to the dish. No overpowering flavour or aroma at all, it's more about texture.

"Curds" doesn't sound to healthy to me

Admittedly it's not the healthiest of dairy products. But that's probably the whole point of it, as poutine probably isn't (or shouldn't) be a daily regular on anyone's diet. Consider it a once in a while treat, nothing more.
In the process of making cheese milk is separated into liquid and solids. These solids are referred to as 'curds'. They are high in vitamin A, protien, but also quite high in fat, calories, sodium, and cholesterol. Cheese curds have zero carbs.
So for example, if you're on a 2000 a day calorie diet, 3 oz of cheese curds on a poutine will constitute about 15% of your daily limit. Of course when you add in the fries and gravy that brings it up even more.
Once a year for me. If that. But it's worth the wait.
