I'm sure they fully intended to try and make it appear to Ramsey as if it was the perfect restaurant and their lack of success must be due to those "nasty bloggers" who had written bad things about them. Amy couldn't even take the slightest criticism Ramsey gave her, just kept talking as if the world was out to get her for no reason.

I did kinda enjoy her Kanye West-like comments of God coming down from the heavens and tapping her with the gift to be the best all around chef in the world. Nothing screams crazy like the answer to "how do you know you're really good?" being "God came to me and made me the best in the world and if you don't agree, you're a hater"
