Term was coined for cowboys in Florida in the 19th century actually. I guess it fits him kinda. Summer heat, sunburns...also produced "redneck". Necks became so red, the skin cracked. Hence, "cracker."

These guys were also often on the hunt for runaway slaves who fled to Florida from other southern states.

Its originally a non-racist term that has since been given racist connotations.
