You can create a special domain (but don't ever lose it!) and create a special subdirectory and for each site make a name like "sponsor-site-campaign.php" and put a jump script there. Then whenever you would link to the sponsor you simply link to your jump script instead. You can also disallow it in robots.txt so it doesn't take link juice.
If a sponsor ever folds or screws you then you can change it in less than a minute globally.

As a bonus with a decent stats program like awstats you can see exactly what you are really sending each sponsor without relying on their stats. And you can delve into your raw access logs to get more info if needed too.
