With Zimmerman, the kid was on top of him and not stopping. This means it had the potential to go too far because the kid didn't stop when he knocked Zim down.
Meanwhile, these two kids clearly walked away after the guy with the gun went down.
That is the major difference.

Of course you can be beaten to death, but 99.9% of the time fist fights end with both parties still living.
How is one to know how far the fight is going to go? That's part of the problem because you don't know this when the fight starts, and after the first few solid rounds land you aren't thinking straight, adrenaline kicks in, and your instincts focus only on survival.
In both of these two examples this is not life threatening in either way. We can't start shit with people, then pull out a gun and shoot people dead when you get your ass beat down. In the case of Zimmerman the police were already enroute, and multiple people had heard his calls for help... Seconds after the shooting witnesses had arrived on the scene to help - Zimmerman was asking them to "restrain" Martin.
Zimmerman was a fist fight that ended with a seventeen year old getting shot and killed.
