That's not necessarily true. Everyone has a different physiology.
You are right that a lot of people would indeed have that initial jump before hitting a plateau.
But not everybody. Me, for instance.
I was 135 pounds at 6 feet tall until I was 34 years old. My metabolism is so high that it is very difficult to put on weight and muscle. I'm what is known in bodybuilding as a "hard gainer".
To get my initial boost I had to start taking tons of supplements and drinking 4,000 calory weight gainer shakes on top of eating 4 times a day.
It took me almost 2 years to get to 155 pounds
And another 3 years to hit 200.
Now I hover around 210 for the last 10 years. But getting my body to get to this point took years.
