Then you want to stay away from all the large tourist areas as much as possible.
The places Max listed are worth a visit and not overdeveloped. But note, there isn't much to do on the smaller, remote islands unless you're into diving or being a beach bum.
If that does appeal to you, spend some time on google trying to find smaller islands. Most of the tourist haunts have been overdeveloped.
Phuket is a good jump off point, and worth a couple of days for some nightlife, but head on out from there to more remote places if you want privacy. The nicer resorts will all have private beaches that will be clean and usually not full of people. You usually get what you pay for.
Stay out of Pattaya if you need R&R, it's for whore mongers and hard core party goers. Not a relaxing place unless your version of "relaxation" means screwing cheap hookers every night or drinking until you get drunk enough to screw a young boy.
