Keep in mind that the guitar bridge and nut are grooved for the size of the strings. That would be strike one against just doing that on the fly.
Strike two would be the intonation. And that probably wouldn't ever set up correctly because of the nut and bridge set up for the bigger gauge strings coming down to the lighter gauge strings.
In order to flip one upside down like that takes putting a new nut and bridge on it and then setting the whole guitar up to reflect that.
I'm pretty sure that Patrick doesn't have the time or inclination to do something like that at Internext.
