History, H2, Science Channel, National Geographic, Discovery, the Military Channel & PBS are some of the best plus you have a lot of foreign documentaries from the BBC and elsewhere that one can watch on YouTube. PBS.org is an incredible resource as well that has a large collection of documentaries and science shows.

Just don't expect to switch your tv on randomly and find the good stuff. Check the web sites for those channels and set your DVRs or hook your computer up to your tv and enjoy the streaming goodness of the large number of serious science and documentary shows available nowadays.
Still in all, hiding the good stuff while leaving the rubbish mislabeled and strewn all over the place kinda sucks
