Last night I had some leftover roasted chicken. I was going to make a simple chicken salad with some fresh vegetables but figured i'd try something a bit more fun. Did a spinach jambalaya. Basically just a stir fry you add sausage and sassafrass (gumbo file) to. seafood too if you got any available.
pulled apart chicken into chunks, pealed the skin. used 2 spicy italian sausages grilled and sliced, green peppers, green onions, tomato past, pimento paste (siracha works instead), sassafrass, cayenne (only if you like it spicy, was good without) then add spinach and crushed garlic in the last few minutes, i use this instead of rice, which doesn't work for my low carb diet.
inexpensive, about 10 bucks worth of ingredients and only took 15 mins to prep and cook--and low on sugars.
for dining out or delivery I generally stick with salads with meats and low sugars, greek salads are perfect for my diet, loaded with antioxidants too. for snacks i stick with nuts and seeds, although celery with some dip is a nice change.
