It looks like he is demonstrating something called the Leidenfrost (sp?) Effect. When Liquid N02 comes into something much hotter than itself like his hot head on a summer day it forms an layer of vapour that protects him and prevents it from immediately boiling and damaging his scalp, skin, etc.
