A lots but the most important plug-in for your project is Ultimate CMS on
WordPress Ultimate CMS Plugin
I use it to add my own "model" taxonomy and adding custom fields for birthdate, vitals, twitter page...
It also work to add custom fields for the classic category.
But you will have to manage some coding to create your own category.php template to display these custom fields.
