Excellent point. I agree with your implication regarding cuisine changing due to external contributions. Otherwise, there'd be no such thing as 'authentic' cuisine. Everything comes from somewhere else.
Crops from the New World definitely revolutionized world cuisine. Which crops came from the Americas? Tomatoes, potatoes, many types of beans, hot chilis, quinoa, etc etc
