Actually, it's not as difficult as people think it is (as long as you like cooking and baking since the regular keto fair can get pretty boring). Once you honestly figure out you're really not missing anything by not having that cake, or those fries, etc, it's much easier.
And my goal is simply feeling good. On a low fat, high carb diet I pack on the water weight like no man's business. About 5kg to be exact. My joints ache from the inflammation and I'm ruled by my eating schedule. If lunch is regularly at 12pm (which is lunch break during work days) and I don't get food in me by 12:15, you DO NOT want to be around me.
However, with keto (and 18/6 IF), there's no water weight, no hunger, and my blood sugar is stable. Mealtime is usually at 6pm but if it's at 7? No worries. Oh, and I actually sleep better and am way more energized. And there's absolutely no after dinner dips.
