Mung bean sprouts is a regular in our diet and my mom personally grows them rather than purchasing the commercial ones. She only soak the beans 2-3 days before the intended use as she doesn't like stocking the sprouts in the ref. You have to be really careful in the preparation and germination as don't want any bacteria like salmonella growing with your sprouts. Have you tried alfalfa and sunflowers sprouts?
