I agree, there is no shortage of people who will buy from Amazon. If you're making a solid income keep doing it.

However the thing with Amazon is that there are quite a few "shiny object" all in one Amazon store solutions on the market that can end up causing you grief in the SERPS. So providing you're not using some automated store and are just blogging with original content then you'll be fine.

I'm going to answer your original questions directly

You can do that, but you also don't want to look like a blog network. You also don't want to expose all of your sites if Google decides to algorithmically or manually penalise a site.

Typically if you have a site on Cameras and another on Guitars then you have no real reason to interlink them. If the niches are more narrow like Keyboards and Monitors then the best thing to do would be to add some suggested Monitors to each blog entry on Keyboards and vice versa on the other site.

This provides you with a single point of failure. If for some reason the Google Gods change up an algorithm and it hits your site then you're done for all three niches.

The beauty of having three sites is that you can still build a mailing list from all three and you have greater income protection because one site might up end going south but the other two keep returning income.

Back to my point in the previous paragraph, make sure you're building a list. There is a saying in the mainstream affiliate world that the money is in the list - and it's true.

If people have bought via you before then there's a chance they'll do it again. Capitalise on that chance by having them on a list and communicating with them.

But it's also "way easier" to lose it all in one fell swoop if Google decides to algorithmically penalise your site.

There's an old saying that's true to any part of life "don't put all your eggs in one basket".

(I mention three sites as an example because you said 3 were doing nicely. I suspect if the other 7 sites aren't worth the effort that you're putting into them then drop them - because it's easy to become fatigued keeping many sites up to date unless you have a really good system going.)
