Mostly, i presume because a significant amount of glycogen is stored in your liver and because proteins in part, get converted to glucose - even though you're eating low carb. That's why the optimal way to lose weight on a ketogenic diet is to have a fairly high % of calories from fat, not protein (more than 1/2 for example)
I think most people with desk jobs should be on a low carb diet. I started reading up on fat and how important it is for hormonal regulation, brain health, absorption of nutrients etc It's vital for long term health to be getting a good percentage of your calories from fat, this low fat dogma we've been fed for the past 30/40/50 years is nonsense!

People bang on about moderation and healthy balanced diets etc but there is nothing healthy about waking up and loading up on cereal and toast in the morning, followed by more and more carbs throughout the day. I know diabetics that have a diet that's full of carbs, nothing healthy about your insulin levels spiking up and down like a yo yo all day long.

I read recently that one in three children born in the United States after 2000 will likely develop type 2 diabetes sometime in their lifetime. That's fucking mental!

It's not easy to get over 50% of your calories from fat though, avocados, nuts, seeds & eggs are the main healthy options.

Joe Rogan talks about this stuff very passionately on his Youtube channel, mind you the guy is big into hunting and recently in one of his podcasts he talks about some of his friends only eating wild meat from hunting to avoid intensively farmed meat.

I find it amusing when people claim the Atkins diet doesn't work, or didn't work for them.

Yeah that's because they didn't stick to it, they went back to eating loads of simple carbs again and they start storing fat again.
