The Arabs kept attacking them and they kept beating the shit out of their Arab attackers. In retribution, they kept the land they conquered. They did it for safety reason as well. It helped them define and strengthen their borders against the inevitability of more Arab attacks.
Israeli war of independence - November 1947

Six-Day War - June 1967

Now look at the infographic again and the date correlations to the wars they fought. It should change your perception of reality.
