the simple facts that you claim you are a huge star wars fan and already have tickets to the next one proves the original isn't old and dated.
and the "technology" (i think you mean special effects) in the original don't detract in the least from the film. that's like saying the original would be better in fancy 3d.
plenty of movies and television stand the test of time and repeat viewings. star wars is one of them. seinfeld another. there are entire television stations dedicated to broadcasting old television shows like gilligan's island, hogan's heroes, i dream of jeanie...etc, and certainly old movies and that's because they stand the test of time.
it's like saying 2001: space odyssey is old and dated and interstellar replaces it. not at all.
