Let's see if I can remember it all as I always let goodgirl handle the food end of things.
We had THE MARGHERITA as the base: Tomato sauce with fresh mozzarella and fresh local basil. Then added Fennel Sausage, fresh garlic and roasted mushrooms.

Contrary to Furus' allegations, this guy was the personal chef to the guys mentioned and they are featured on their website. They have had a couple of them act as guest bartender. One owner told me that he wants to get Mel as a guest bartender but they need to figure out how to keep him from drinking on the job.
