Nobody can answer these questions without knowing more about your business and your future plans. It all depends on what you need to do today and what you need to do tomorrow. Some people need help everyday, others very rarely need help.

If this is for your pay sites, I would not recommend unmanaged. If something goes wrong at 3 AM, it is highly unlikely that you will be able to pull in your freelance tech and get them to fix things. I would guess that your paysite business is your core moneymaker, you can't afford to have that down for three days because you can't get a hold of your freelance tech. That is not worth the savings.

The best thing you can do is talk to a few different companies, see what they can offer for you, and then make a decision based on what works best for your specific needs. Web hosting is a huge decision and should not be taken lightly.
