It saves some space inside the phone to pack even more goodies into it, and helps make the phone water resistant. iPhone 7 ships with Earphones anyway ("Lightning Earpods"), which, if they are the same as the iPhone 6 and 5 Earpods, are really quite good. iPhone 7 ships with a little adapter that still lets you connect your old earphones anyway.
To be honest, I'm not totally sold, but I will still go to an Apple store to check the new phones and pods out and decide for myself.
