The immersion is total when you can move three-dimensionally in the environment, which is not possible with video. In this case, it's just a bit of 3d improved.
The gaming experience is impressive and I'm pretty sure it will be a huge hit on christmas, especially since that Oculus revealed they will release a VR ready computer for $499 only.

3D on OR's and similar VR's looks amazing when its shot properly, but you're right, there's no immersion. The task that alot of content producers are working on is to find a way to create immersive video at a low cost. It's crappy today today but there's no doubt it will get better.
As for getting sick, you won't.
Early models had some people getting sick because the movement of what users were seeing, would not quite keep up with a person's head movements. This lag would make your brain think it was poisoned and tell your stomach to throw up. (This happened on early test rides of the old Back To The Future ride at Universal Studios. Riders were puking all over the place until they fixed the lag issue).
