With Texas, the theory is that they have a lot of Hispanic voters there and that many of them don't like Trump so they are voting Hillary this election where in the past they might have voted Republican or not voted at all.
With North Carolina, there are a few things. They have about twice as many black voters as the typical state which helps democrats (Obama won it once and lost it once and both were close elections) and I read that they have had a few cities do some serious expanding over the last 15 years including Charlotte and they are attracting businesses there. Those businesses often bring with them employees that may be liberal or left leaning. It appears to be a state that is starting to shift.
Look to Virginia as an example. It was a solid red state for a long time, but in the last 10-12 years there has been a large influx of people moving there from places like Washington D.C. and Baltimore and it is changing the demographics there and turning it into a solid blue state.
