My grandfather paid with company payroll checks to all of his workers. And he had 2 full time people who did nothing but accounting, payroll, and taxes.
The citrus pickers make great money and taxes are taken out of every check.
You are thinking of Mexicans mowing your yard or cleaning your house.
That's just small stuff in the bigger picture.
More white people make money "under the table" at flea markets and strip clubs, etc. than Mexican workers doing yard work or maid service.
