I've been looking at hitbtc, looks interesting but you really need to go through hoops to get verified and I think I might fail as my bank account is at a different address to my I.D.

Get verified only at one place to buy a major coin (btc,ltc..) with cash then just move that coin to an exchange where you will trade only in coins so you don't have to get verified. I think this is the easiest and safest option (safest regards your ID .. ).
