I have all the makers or have had.... I think a fresh medium roast South American in a press is my fav. I put fruit in the press or cinnamon when I want to jazz the coffee up... AND I only use 100% cream. at whole foods, they have a great brand in glass bottles that really are amazing.
thing is when you roast your own and do the grind... really new game. as the guy pointed out coffee beans have fats and complex carbs that break down within a week affecting the flavour... find a roaster in your area and get some beans. the lighter the roast the higher the caffeine the less intense the flavour.
