Watergate hearings started May 17, 1973.

Watergate didn't end when Nixon resigned. The investigation continued after he resigned.
In 1975 John N. Mitchell, John Ehrlichman and H. R. Haldeman convicted of conspiracy, obstruction of justice and perjury. Even After Nixon resigned, Nixon gave testimony in the case in 1975.
Just because one person pleads guilty and resigns his office surely doesn't mean the investigation just suddenly ends.
