You don't need any education to harvest crops and do labor at construction sites.
I live in a town that is surrounded by farms so we have a lot of migrant workers and illegal immigrants. They get paid cash at the end of the day for their work. There are even places where they gather in the morning and the farms and construction companies will go down with buses and pick them up, drive them to the job, then bring them back.
Trust me, they aren't good jobs, but plenty of them are able to find work.
The welfare part of that comes when they move here illegally then have a kid. That kid is a US citizen and can get welfare. Ending the anchor baby law fixes that problem.
