That Xeon is 8 years old. Those i7 are desktop level chips. I wouldn't use either.
Judging specs just by specs is not going to get you the best solution. For best results, I recommend having a knowledgeable tech take a look at your set up and making a recommendation based on what you have going on. Tweaking is always possibility to make things run better for you as well.
