Paul you really don't have a clue. That's what happens when you pontificate on subjects you have zero personal knowledge of. Now if you lived in the USA and owned businesses you would understand that some Americans just don't want to work for any amount of inducement .

My personal experience (because i live in the USA and own businesses)was in San Diego, i employed chefs, cooks, line cooks, baristas and dishwashers. In four years i had to replace every American Chef and Cook due to one or more of the following issues, alcohol abuse, verbal abuse of customers, drug issues, theft and no shows. They had all been paid very well in fact 25% above average for San Diego but still they all these issues and more.

I replaced them with documented latinos who where clean, had no drink or drug problems. Arrived on time stuck to the menu and where polite to customer. In almost four years only one latino cook had a sick day, just one, amazing!
