not understanding why you want to back up more back ups, each back up updates from the past back up so you have all relevant information. Youīd have your full server backed up if it was from last Sunday...
I donīt think they redo everything, just updates goes onto the past back up, you would be able to know if itīs from the back up before...
your Sunday back up will be clear if it went down Wednesday
