The classic way is to bite and chew it by small pieces. But personally I like to chop it right into the soup, when it's served (not before!)

A chicken breast usually as a fool piece (not grated or diced) to not let it boil soft and make the broth cloudy. When borscht is ready, you may сhop that meat into the soup - depending on your personal preferences. Actually I'm the only meat eater because my wife is a vegan. Even those products that contain eggs or milk are no-no for her, because its exploitation of animals. So if she cooks a vegan version of borscht for herself with vegetable bouillon.

Indeed. Steak is a rather expensive food (especially if it's a good rib-eye part of Black Angus. Also I don't think it's very healthy to eat it every single day. Once a week or so should be ok IMHO.
