For your cornbread you might want to consider a toaster oven next. I use mine pretty much daily and I used to fly through them, they would die after a year. Several years ago I got a really nice stainless steel one, similar to the following link, and it's been fantastic:

If you do go ahead with removing your oven, a sizable toaster oven can quite easily replace most of your oven needs.
