Here's the thing. Someone takes an IP like The Witcher, which is based on books. The books describe a specific person. People imagine this person in their head based on this text. Then they take this blonde girl and replace her with black woman. Her being black does not contribute to the story, she's just there for the sake of ticking off some checkboxes.
As The Porn Nerd said, someone could easily make a brand new IP that has gay or black or whatever characters built into it as part of the story. I'm sure there is a whole rich history of medieval/ancient African stories and myths that would be very enjoyable to watch, however if someone like Kunta Kinte was cast as a white woman in a remake of Roots it would look stupid, no?

I actually get where you're coming from. I even said as much earlier in this thread. So a white MLK or a black Amelia Earhart would be weird for me. But this thread is about bloody elves!!!
Also, I don't know much about Viking history, but I do know that they were white. The black woman being in it didn't change much for me as a viewer.
