As a producer, when this happens, you can DMCA the platform, you can simply never book that person again, you can book that person only for trade in the future, or you can just shrug and ignore it. If they are a really big star, who would have deep enough pockets to be worth suing, you can get in a legal scuffle with them, and have random fans sending you annoying emails for the next year, even if you win monetarily.
Having a lot of attorneys in my family, I feel qualified to say that there is not much you can do about it that is worth doing. (I am not an attorney; this is not legal advice.)
Stuff like this discourages a lot of producers from producing.
