For Small Stakes.. Monte Carlo and Mandalay Bay have good Cardrooms.
For larger and the largest Stakes.. Mirage and Bellagio.
I don't think there are even any others in Vegas worth mentioning!
EDIT: The Palms also has a pretty cool card room I've played.
