my good friend is a meat cutter of 25 years and meat manager at cosco. he put a diamond edge on my filet knife 6 years ago, and it's not dulled a damn bit, razer sharp. You're a knife enthusiast juice? You'd like my vintage Case XX's. Got a set of desert princes, vintage, hadn't seen the light of day nor boxes opened since 1981.
