Well...when it comes to drawing pistols and pointing it at "the companies who shave", I really don't think there's that many people with grounded arguments. As Darren said, there's no way to classify "companies who shave" by which software they use or which processor they use etc etc.
At the end of the day, the only way to tell if a company shaves is to track all your clicks that you're sending to them, and if they don't show up at the other end, then something isn't right. Even then, they may not be shaving intentionally, talk to them and find out what's up. If you get a bad feeling about who you're doing business with, do business with another sponsor.
Many companies rely on their integrity to keep them in business, we do. Honesty is the best policy. Even if we did have the ability to shave, if we got busted doing so, then where does that leave us? We'd no longer have an edge over the competition, because even with the major advantages of our affiliate program, shaving would leave us on a level playing field with the rest of this industry.
