hmmm, let me think.
Spices: (please if your spices are older than 6 months buy new ones)
2 tbls celery salt
1 tbls cayenne pepper (adjust to your heat level, gets stronger longer you cook it)
1 tbls cumin
1 tbls garlic powder
1 tbls pepper flakes (also adjust)
1 packet goya (
Click if you dont know what this is. Available in cuban markets) It is optional.
Wet stuff:
1/4 cup apple juice or cider. (I like cold pressed cider)
3/4 cup brown sugar (regular not dark)
1 & 1/2 cups Chili sauce or ketchup (I like Chili sauce)
1/3 cup maple syrup (real maple)
1/4 cup dark molasses (regular type, light molasses can be used)
2 tbls tabasco or other vinegar based hot sauce (adjust to taste)
1/4 cup whiskey or rum
2 tbls worcestershire
Put everything in a sauce pan besides the whiskey/rum, mix very well and simmer for about 15 minutes stiring often. It should look pretty red. Take off heat and stir in the whiskey/rum and use as is or baste your food.
You may add booze during the simmer time if kids shall be eating this to evaporate the alcohol.
