Ritual sacrifice was the method chosen by God for the atonement of sin. In order for the sacrifice of Christ to have any meaning, the whole ritual had to have been in place prior to Christ's crucifixion. The use of animals was a foreshadowing of the ultimate sacrifice to be made by Christ.
Christians believe that there are many references in the Old Testament to Christ. One such foreshadowing was the story of Abraham and Isaac. God told Abraham to slay Isaac, and he would have if God had told him not to at the last second. This is taken as a foreshadowing of Christ i.e., that the final sacrifice would come from thru the seed Abraham.
