first of all what do you mean the Holland America Line ?
If you got problems onboard you should head over to the 1st mate of captain they can help you for sure and they speak english very well
you probably met one of those philiphinno's thats what they call sailling under cheap flag, they pay only 5$/day to those guys so you can't expect that they speak english maybe a few words like go fuck yourself LOL most of them dont have an education only the officers onboard (all dutch at the Holland America Line) speak english very well to my knowledge (a few friends of mine are sailing there as engineer and mate)
i suggest that you call their main office and ask for another free trip at least or maybe you can get a refund of %40
