Firstly, Turkey is one of the major beach resorts for most of Europe.
Secondly, in a past life I was a travel agent..it all depends where you are flying from but I would aim to get on a major European carrier and change in whatever country they are based.
I personally reccomend Air France both for price and service. I flew them from London to NYC (via Paris) right after sept 11 and they were great.
On the Istanbul route you also have KLM who are usually good tho have been known to have a few lugage issues but I think those are in their past.
British Airways also has a route via London. They are solid with an excellent safety record. A bit more costly than the other two (atleast from this side of the pond) and sometimes a bit cramped but overall good stuff.
Also, not going to Istanbul because there is a tiff between India and Pakistan is like not going to New York because there is a war in Peru.
