This doesn't follow. Just because a contract doesn't legally bind a person, does not mean that they are violating those contracts.

At 16, I can sign a contract to pay money in exchange for a car. I can then pay the money and get the car. The contract isn't binding, but I can still execute it, and it's not illegal.

By your logic, any transaction of any kind would be illegal if it involved a person under 18 years of age.
