The amount of content you have has nothing to do with how much ram you need. First of all memory is dirt cheap, I wouldn't put a machine together without 1GB. The more ram you have the more apache session you can have without having to swap to the drive
Secondly go with a mirror or a raid drive so you don't have to worry about a drive crapping out on you, again drives are really cheap compared with having to have a new drive loaded, and then uploading all your 100GB of content and loosing 2 to 3 days worth of sales !!!
