I've experienced this most of my life. Singing in groups, playing in groups, generally creating music with others around you. This entrainment is only evident in these situations BECAUSE if you are not in tune with the others around you, and your body the music sounds CRAP. Your heartrate and breathing change to match the time signature of the music because if they don't you don't make good music. Same in a choir. You breathe together so the music sounds good. Simple as that.
Entrainment is much more apparent in nature. Animals have instinct that can be called entrainment. Don't apply it to people because it is a choice more than an instinct.
