![]() 6 lb RibEye roast smoked in a weber 18.5" grill with a 50/50 mix of apple and cherry. 3 hours between 220-250 then wrapped in foil for 2 hours still at 220-250. No rub, just salt and pepper. ![]() Yum. .

In the first pic, I was thinking it looked more med/well (different lighting often makes it look more well done than it is), but in these it looks perfect. Ive never smoked a prime rib before.. BBQ'd yes, even cooked one with a salt crust. Looks like I may have a new project for next summer. do you get a decent smoke ring when cooking a prime rib? And how far into the meat do you get the flavor?
