Hi Brian,
Thanks for reaching out to us! If you purchase beans online, we roast to order and we roast all of our coffee the day before it ships. To give folks an idea of when they should expect their shipment, we include an estimated delivery alongside each shipping speed option in the check-out page. It looks like you're in California, so your coffee would be shipped out of our Portland headquarters, and it would arrive 2 - 3 days with standard shipping. Additionally, we think coffee tastes best when it's brewed at least one week from the roast date! This time frame allows the beans to de-gas a bit for an optimal brew. Hope this helps! I've made espresso an hour after roasting, so i don't really beleive in the offgassing shit. Even if you do think it's better after offgassing, 24 hours is enough. 7-10 days and you've got stale coffee, for espresso anyway.
